Most everyone loves a good Caesar salad and its one of the few salads kids might try. (Kudos to you if your kids already like salads, I struggle here!). Homemade Caesar dressing is the way to go!
I have never found bottled dressings to be nearly as good as the restaurant ones, and this one tastes just like the best restaurant versions! I got this from www.onceuponachef.com and tweaked it a little using more garlic and real anchovies (because I love salty anchovies!). Use less depending on what you like.
Many think making homemade dressing is difficult or time-consuming, but it really is sooooo easy. And not only do you get such better flavor usually, it doesn’t have all the added stuff like sugar and preservatives.
Try this Caesar dressing, add some cool crisp romaine lettuce, crunchy croutons and that’s it. It’s a good way to start kiddos eating lettuce and salads!
Simple Ingredients for Homemade Caesar Dressing
PrintThe BEST Homemade Caesar Dressing
Description
This is BY FAR the BEST Caesar Salad Dressing I’ve ever had. There is no comparison between any bottled dressing and this one. And I’ve tried most of the Caesar dressings out there.
Ingredients
- 1 cup mayonnaise
- 1/2 cup grated Parmigiano-Reggiano (or just regular parmesan if that’s all you have)
- 3 garlic cloves, minced
- 2 canned anchovy filets (finely chopped)
- 2 Tbsp fresh squeezed lemon juice
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1/4 tsp salt
- 1/4 black pepper (freshly ground if you can)
Instructions
- Place 1 cup mayo in a small mixing bowl.
- Add the 1/2 cup Parmigiano cheese and all other ingredients.
- Whisk together until well blended.
That’s it!
Keep in a cute mason jar or other container in fridge for as long as your mayo is good, or about 2 weeks.
Notes
*You can use 1 tsp. anchovy paste in place of the filets. I like anchovies and I think the canned filets give the dressing a really great Caesar flavor. If its too much for your kiddos, cut the amount or leave out the anchovies altogether.
