Cashews are a funky little food that grow at the bottom of the cashew apple. The cashew apple is the fleshy part of the fruit and the nut attaches to the bottom and is encased in a shell. We did not know that until we researched it and it is pretty cool!
Cashews have 160 calories per ounce (about 18 nuts), 13 grams of healthy fats, and 5 grams of protein (which is a lot!)

- Most of their fat is the healthy unsaturated type, which actually helps to protect your heart!
- Cashews have high levels of antioxidants that specifically help to protect your eyes, so if you like your eyes, snack on these babies!
- Cashews are used frequently in the increasingly popular vegan-style of eating (no animals or animal products). They work well as cheese substitutes in recipes like our VEGAN CASHEW PESTO, and as a substitute for the cream and butter in many cream sauces like our VEGAN FETTUCCINE ALFREDO. Just soak them in water to soften them up and the texture is close to that of cheese (and cream when pureed).
